Easy Skillet Enchiladas: A Quick and Delicious Recipe

Who doesn’t love the rich flavors and comforting warmth of enchiladas? These beloved Mexican dishes are a staple in many households, and for good reason. But what if you’re craving enchiladas and short on time? Fear not! With this simple recipe, you can whip up delicious skillet enchiladas in no time at all.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic
  • 1 pound of shredded chicken
  • 6 chile Guajillos (deseeded)
  • 2 tomatoes
  • Corn tortillas
  • Queso Fresco
  • Salt/pepper to taste
  • Optional toppings: diced avocado, sour cream, salsa

Instructions:

  1. Enchilada Sauce: Add tomatoes, chile guajillos, salt/pepper to a pot of water and bring to a boil. Set aside 2 cups of the boiled water. Transfer the tomatoes and chile guajillos to the blender. Add the garlic, salt and pepper to taste, and the 2 cups of water and blend together. Strain the sauce removing any thick consistency.
  2. Prepare the Filling: Shred your cooked protein and set aside. Common fillings are shredded chicken, queso fresco, or beans. This is all based on preference.
  3. Warm the Tortillas: In a skillet, heat the corn tortillas for a few seconds on each side until they are soft and pliable. This step prevents them from tearing when you roll them. After you heat up your tortillas, leave the skillet on and add your olive oil.
  4. Assemble Your Enchiladas: Dip your tortillas in the enchilada sauce and place in the skillet. Spoon a portion of the meat onto each tortilla, then roll them up tightly and place them seam-side down. Heat until tortillas are brown on both sides.
  5. Cook and Serve! Finish making all your enchiladas and remove from skillet. Sprinkle optional toppings such as diced avocado, sour cream, queso fresco, lettuce or salsa over the enchiladas. Serve hot and enjoy your delicious skillet enchiladas!
