How to Make Authentic Mexican Jaiba (Crab Ceviche-Style)

If you love bright, coastal flavors and refreshing seafood, Jaiba is one of those dishes that hits all the right notes. It’s light, tangy, and packed with the crisp freshness of lime juice, cilantro, and crunchy veggies. Traditionally served chilled over tostadas or crackers, this dish is perfect for warm days, parties, or anytime you’re craving a taste of the coast.

In this recipe, I’ll show you how to make Jaiba estilo ceviche, using imitation crab (surimi), which is commonly used in Mexican seafood stands — but you can use real crab meat if you prefer!

What Is Jaiba?

In Mexico, jaiba refers to crab — and this dish is often made with imitation crab meat that’s shredded and marinated in lime juice, mixed with fresh veggies, and seasoned to perfection. Think of it as a crab salad-meets-ceviche hybrid. It’s bright, citrusy, and has just the right amount of crunch.

Ingredients

  • 1 lb imitation crab meat (jaiba style), shredded or chopped
  • 1/2 cup red onion, finely diced
  • 1 cup tomato, diced
  • 1 cucumber, peeled and diced
  • 1/4 cup cilantro, finely chopped
  • 2–3 serrano or jalapeño peppers, minced (optional, for heat)
  • Juice of 6–8 limes (enough to coat and lightly “cook” the crab)
  • Salt and black pepper to taste
  • 1–2 tbsp olive oil (optional, for richness)
  • Tostadas or saltine crackers, for serving
  • Hot sauce and avocado slices for garnish (optional)

How to Make Jaiba

  1. Shred the crab:
Tear or chop the imitation crab into bite-sized pieces. Place in a large mixing bowl.
  2. Add the veggies:
Stir in the red onion, tomato, cucumber, cilantro, and minced chiles if you’re using them.
  3. Add lime juice:
Squeeze in enough lime juice to fully coat everything — the acidity is what gives it that ceviche-style flavor. Let it chill in the fridge for 20–30 minutes so the flavors come together.
  4. Season it up:
Add salt, pepper, and olive oil (if using). Mix well and taste to adjust seasoning.
  5. Serve it cold:
Spoon the jaiba mixture over crispy tostadas or serve with crackers. Top with slices of avocado, a few dashes of your favorite hot sauce, or a splash of Maggi or soy sauce for a little umami kick.

Tips & Variations

  • Want real crab? Just sub in lump crab meat and skip the imitation stuff. It’s delicious either way.
  • Make it creamy: Add a couple of tablespoons of mayo or Mexican crema for a richer, salad-like version.
  • Keep it crisp: Add cucumber just before serving so it stays fresh and snappy.
  • Make ahead: You can prep it a few hours in advance, but don’t let it sit overnight or it may lose freshness.
