How to Make Quesadillas with Handmade Tortillas

Few things compare to biting into a warm, cheesy quesadilla with fresh handmade tortillas. The best part? In this recipe, we’ll show you how to make delicious quesadillas with chicken or carne asada, topped with flavorful nopales for a true Mexican touch.

Growing up, some of my favorite memories took place in the kitchen watching my mom cook. She always said that while a meal can be simple, it should never be “basic.” For her, that meant never settling for store-bought tortillas when you could make them fresh.

I remember the rhythm of her hands as she worked the masa. She didn’t need a timer or a thermometer; she just knew by the smell and the slight “puff” of the tortilla on the comal when it was perfectly cooked. She would make these quesadillas for us all the time, and even though the ingredients were straightforward, they felt like a feast because of the effort she put into the base.

To this day, whenever I smell fresh masa hitting a hot skillet, I’m transported back to that kitchen. It taught me that the best Mexican comfort food isn’t necessarily the most expensive—it’s the kind made with patience and tradition. This recipe is my way of sharing a piece of that childhood magic with you.

Why Handmade Tortillas Are Worth the Effort

If you’ve only ever had quesadillas made with flour tortillas from a bag, you are in for a total game-changer. Handmade corn tortillas have a distinct, earthy sweetness and a chewy-yet-tender texture that store-bought versions simply can’t replicate.

Using masa preparada (fresh dough) from a local Mexican market makes this process much easier while maintaining that authentic flavor. When you press them yourself, you control the thickness. A slightly thicker tortilla holds up better to the weight of the melted Oaxaca cheese and juicy carne asada, ensuring your quesadilla doesn’t fall apart mid-bite.

Ingredients You’ll Need

For the tortillas:

  • 2 lbs store-bought masa dough (masa preparada, found at Mexican markets)
  • A tortilla press or rolling pin
  • A nonstick skillet or comal

For the filling:

  • 1 lb grilled chicken breast or carne asada (thinly sliced steak)
  • 2 cups shredded cheese (Oaxaca or mozzarella work well)

For the toppings:

  • 2 nopales (cactus paddles), cleaned and sliced into strips
  • ½ onion, sliced
  • 1 tomato, diced
  • Fresh cilantro, chopped
  • Salsa of your choice

Step 1: Make the Handmade Tortillas

  1. Divide the masa dough into golf ball-sized portions.
  2. Place a ball of dough between two sheets of plastic wrap and flatten it using a tortilla press or rolling pin.
  3. Heat a skillet or comal over medium-high heat. Cook each tortilla for 1–2 minutes per side until lightly browned and cooked through. Keep warm under a towel.

Step 2: Prepare the Filling

  1. Season your chicken or carne asada with salt, pepper, garlic powder, and a splash of lime juice.
  2. Grill or pan-cook until fully cooked, then slice into strips.
  3. Set aside while you prepare the nopales.

Step 3: Cook the Nopales

  1. Boil the sliced nopales in salted water for 10 minutes, then drain.
  2. In a bowl, combine the nopales with onion, tomato, and cilantro.
  3. Season with a pinch of salt and pepper.

Step 4: Assemble the Quesadillas

  1. Heat a tortilla on a skillet.
  2. Add shredded cheese, chicken or carne asada, and another tortilla on top.
  3. Cook until the cheese melts and the tortillas are golden and crispy.
  4. Serve hot, topped with nopales, and your favorite salsa.
